This breakfast granola is a must for the whole family. It contains no grain, but valuable seeds, crunchy nuts, lots of coconut and delicious apple chips! The sprouted seeds and nuts are what make it so special.
Soaking triggers the germination process
- This brings the nuts and seeds to life and a process of transformation occurs
- Acids and inhibitors are largely broken down
- Proteins are transformed into easily digestible amino acids
- The nutrient content increases
- Nuts and seeds become alkaline
BREAKFAST GRANOLA
for 2.5 pounds of granola
INGREDIENTS
- 2 cups buckwheat
- 2 cups sunflower seeds
- 2 cups shredded coconut
- 4 apples, finely chopped
- ½-1 cup chopped dates
- ½ cup almonds
- 2-3 tablespoons cinnamon
PREPARATION
- Soak buckwheat, sunflower seeds, and almonds separately in water overnight. The next morning, rinse and drain. Let the buckwheat and sunflower seeds sprout in large sieves throughout the day. Keep the almonds submerged in water to continue activating them, changing the water once. Small sprouts indicate the germination process has begun.
- Optionally, roughly chop the almonds. Finely dice the apples or briefly pulse them in a food processor for a coarse purée.
- Combine all ingredients in a large bowl, mix well, and spread onto dehydrator sheets. Dry in a dehydrator at 40°C (approx. 104°F) for about 8–12 hours. Store in an airtight glass jar.
TIP
Processing the apples into a coarse sauce in the food processor adds more “stickiness,” creating a much stronger crunch effect once dried.
Create your favorite granola
If you prefer your crunchy less sweet and more fruity, simply increase the amount of apple and leave out the dates. You can also swap the nuts and seeds according to your personal preference.

- 6-8 apples
- 2 tablespoons cinnamon
- ½ cup brazil nuts
- 1 teaspoon vanilla
