Coconut Berry
Ingredients
Makes 6 ice pops
- 250 g blueberries or other berries
- 2–3 Medjool dates
- 100 g coconut butter
- 1 tbsp rice syrup or agave syrup
- 100 ml water
Instructions
- Blend the blueberries and Medjool dates until smooth. Fill about three-quarters of each ice pop mold with the berry mixture.
- Gently melt the coconut butter using a warm water bath. Blend it together with the sweetener and water until smooth and creamy.
- Pour the coconut mixture over the berry layer and finish with the remaining berry purée. For a beautiful marbled effect, gently swirl the two layers together using a spoon or a wooden stick.
- Close the molds, insert the sticks, and freeze for at least 2–3 hours.
Before removing the ice pops, briefly dip the molds into hot water. This will help release them easily.
Tips:
To keep the coconut layer bright white, avoid using dark sweeteners such as date syrup.
