It’s strawberry season! The abundance of fresh strawberries practically invites us to get creative in the kitchen and try new recipes. Today, we’d love to share a special highlight: Strawberry Tiramisu Cups.
This unique version is completely raw, made with tiger nut sponge instead of ladyfingers, coconut yogurt instead of mascarpone, and contains no refined sugar at all. Perfect for anyone who loves healthy desserts.
Strawberry Harvest Season
Berry season is a culinary highlight every single year — and it all begins with strawberries.
Strawberries contain even more vitamin C than oranges and are rich in folate, iron, calcium, and magnesium. They also provide valuable phytochemicals from the phenolic acid group, known for their antioxidant and potentially anti-cancer properties.
Please note: Unfortunately, conventionally grown strawberries are among the fruits most heavily contaminated with pesticides. In addition, long transportation routes can reduce their valuable nutrients.
That’s why focusing on regional organic strawberries makes this short harvest season something truly special to enjoy ♡
STRAWBERRY TIRAMISU CUPS
Ingredients
Serves 2
• 150 g tiger nuts, tiger nuts flakes, or tigernut flour
• 150 ml plant milk
• 160 g coconut yogurt
• 150 g strawberries
• A little cocoa powder
Preparation
1. Blend the tiger nuts in a high-speed blender until they turn into flour. This can be a bit demanding for the blender, but it works.
2. Mix the tiger nut flour with the plant milk (we used almond milk) and let it soak for a few minutes.
3. Wash and finely chop the strawberries.
4. Layer the ingredients into 2 glasses:
tiger nut sponge, coconut yogurt, strawberries, another layer of tiger nut sponge, and coconut yogurt.
5. Dust with cocoa powder and decorate with two strawberry halves per glass.
Tips:
🍓 We are big fans of simple recipes. If you prefer it a little sweeter, you can refine the coconut yogurt with a splash of maple syrup and a bit of vanilla.
🍓 If you don’t have tiger nut flour available, you can also use rolled oats instead.
🍓 Instead of fresh berries, you can also use our raw vegan jams.
These Strawberry Tiramisu Cups are not only beautiful to look at, but also a true delight for the palate — completely guilt-free. Raw, vegan, and free from refined sugar, they offer a wonderful alternative to traditional desserts.
